Who doesn't love to curl up on the couch with a bowl of pasta?
Particularly after a long run, I find myself craving some healthy
carbs. Something flavorful but not heavy. So I came up with this
delightful alternative.
Prepare whole wheat spaghetti
according to package directions. Meanwhile, in a saute pan toast a
handful of pine nuts. Once toasted remove from the pan and set aside.
Strain pasta once al dente.
Put saute pan over medium
heat. Add pasta. Top with olive oil, minced garlic, sundried tomato,
capers, seas salt, red pepper, and herbes de provence. Warm through
while tossing. Serve.
